Happy Zucchini Day!
Get your zucchini ready, everyone! Tomorrow, August 8, is National Zucchini Day (originally called Sneak Some Zucchini onto Your Neighbor's Porch Night) -- a holiday established especially for gardeners to get rid of some of their excess zucchini. But this year, you won't want to share any of your zucchini, no matter how much extra you have. You can thank the members at Gardenweb for that. Instead of stealthily leaving your squash on your neighbor's front step, try some of their ideas:
"We like it breaded, sliced thin, dipped in egg batter and then in a mixture of bread crumbs and Parmesan cheese and then into the frying pan with about an inch of oil. If by chance you get too many, you can shred it and freeze for later. In the middle of winter, zucchini bread tastes pretty darn good."

"I chop up half or less of an onion, slice a zucchini, put in a small saucepan with a little water and salt, [then] cover and simmer. When it is tender, I drain out all but 1/4 cup of the water, add several pats of butter and pepper and serve in bowls."

"I also use [zucchini] in things like spaghetti sauce, chili and of course it's one of the bases for ratatouille. It's really good grilled too. Cut in half and brush with butter, then salt and grill. Good stuffed with a number of things. Yup, love me some zucchini."

Then there's the old standby, zucchini bread. Our members had plenty of ideas for the best zucchini bread recipe, including versions with chocolate chips and crushed pineapple.
Of course, other members had, shall we say, "alternative" things to do with their excess zucchini.
"After dark, put zucchini on door step, ring the door bell and run away."

"I have found a new use for zucchini. Take the largest zucchini you can find, put a Halloween mask on it and dress it in cast-off clothes, and put it in your garden as a scarecrow! Consider it a 'garden gourd guard.'"

I found a recipe for a chocolate zucchini cake once. This was a big hit with my fellow employees, they didn't even know it was a little bit good for them.
ZUCCHINI & SMALL YELLOW SQUASH SLAW
SKIN ON LARGE ZUCCHINI & 2 SMALL YELLOW SQUASH GRATED
ADD FAVORITE SLAW DRESSING
OR
1/4 CUP RICE VINEGAR
1/4 CUP OLIVE OIL
1/4 CUP SUGAR
FORMENT ALL TOGETHER OVERNITE IN REFRIGERATOR
ADD SALT & PEPPER TO TASTE (SWEET BASIL)
