Cork and Knife
If you're looking for an eco-friendly cutting board, you're probably looking into bamboo boards. Here's another alternative to wood and plastic you may not have considered -- cork. It's light and spongy but surprisingly dense and durable; easy on your knife, yet able to withstand some serious chopping, slicing and dicing. Because cork is made from bark that grows back, no trees are killed to make your cork cutting board. Though it seems like it would absorb liquids easily, cork apparently contains a natural substance called suberin, which makes it impermeable to gases and liquids (and is therefore anti-bacterial, the literature says). I'm not too sure about that last claim, but I found the cutting board to be a nice, lightweight alternative to my somewhat bulky plastic and bamboo ones. It'll be interesting to see how it stands up under repeated use.

Looks like it will be great, right now I use a small plastic and a larger bamboo,but I will certainly purchase a cork one,even for the cafe......
